Folks! 'tis the season to be jolly! Starting today I will regularly post some of my favourite Christmas recipes that have been tried, tested and loved by many many many readers around the world and let's call this series as the 'Best of RR'.
Coming to the first recipe in this series, this Christmas cake has got to be my most favourite one as it doesn't need fruits to be soaked for ages. They can be soaked overnight in a medley of delicious ingredients and with a little effort you are rewarded with two glorious 9" round cakes that will steal your heart (and the hearts of everyone who eats them!)
Every year irrespective of the kind of cake I try (yeah, I love trying at least one new Christmas cake recipe every year!) I make this one for family and friends. Instead of two 9" moulds I often pour the batter into loaf pans of various sizes so that they can be gifted. Often times I have made this recipe three times in a row over a span of a week. The only catch is to chop fruits but if you have help or can do the task much in advance it is a blessing!
